Rabbit Farsiu


  • Rabbit, a piece
  • Lean meat, 700 gr.
  • Liver, 250 gr.
  • Bread crumbs, 300 gr.
  • Eggs, 3 or 4
  • Parsley, a branch
  • salt
  • pepper
  • oil
  • Butter, 150 gr.
  • Onion, 2 pieces



Clean the rabbit. The filling is made with meat, liver, bread crumbs, beaten eggs, parsley, pepper and salt, all passed through the mincer. Fill the rabbit and sewn. Put in the oven with butter and oil, plus the chopped onion. When done, cut into thick pieces and salsea with onion sauce.



The rabbit should be well browned. The we test doneness by inserting a needle. Should be hot and dry out. The filling can be changed by modifying the ingredients.
